Bread made from the same few ingredients takes wildly different forms across regions. Each variable in the process was historically local, and their combinations produced the diversity still visible today.
Grain determined what was possible
Wheat with strong gluten produces the structure needed for a tall, open loaf, while rye, barley and other grains produce denser results regardless of technique.

Small daily loaves and flatbreads belong to places with domestic ovens or griddles, where baking happened at home and had to fit a household's fuel supply.
Flatbreads solve a different problem
Where fuel was scarce or ovens were shallow, breads were made thin and cooked in minutes on a hot surface rather than baked slowly in an enclosed chamber.
That approach needs no strong gluten structure and works with many grains, which is why flatbreads are common across a wide range of climates and crops.
They also suit eating patterns where bread serves as a utensil, being made fresh for each meal rather than kept for days.
Water and local practice add the rest
Water composition affects dough behaviour, and bakers historically adjusted their method to the water they had rather than the other way round.
Local salt levels, shaping habits and scoring patterns then became identifying marks, which is why loaves from neighbouring towns can be visually distinct.
Buying bread from a bakery rather than a supermarket in an unfamiliar region is therefore one of the fastest ways to encounter something genuinely local.
